Salads + Plain Chicken = Healthy Eating MYTH!



Here's a question I get asked a lot when people find out that I have changed my eating habits to non processed food. "Don't you get tired of eating salads?" Or I hear "I just couldn't eat lettuce and plain grilled chicken breast all the time".

Well, here's some news folks: I eat more than salads! Yummy, colorful, flavorful, and delicious meals and snacks that are nutritious too! Yes, I do eat some salads, but they are delicious, full of veggies, fruit (fresh or dried), seeds, nuts, olive oil/vinegar based dressings, with or without meat and cheese! (The key to keep salads healthy is the dressing you use - and sugar free and/or fat free isn't the answer!)


Here's just some of the yummy foods we eat as a family:

*whole wheat pitas with hummus or Dijon mustard, oven roasted turkey slices, raw or cooked veggies with a side salad or veggies with a couple scoops of hummus dip on the side




*whole grain flatbread or sandwich thins (as seen above) pizza made with ground turkey tomato based sauce, cheese, topped with peppers, mushrooms, onions



*Spaghetti Zoodles (made with julienne peeled zucchini and squash, and then sauteing them in olive oil and garlic) with ground turkey sauce with chopped kale and diced tomatoes

*Roasted chicken breasts coated in olive oil and garlic with lemon pepper seasoning (or any other type or salt-free seasoning) with roasted veggies on the side. (sometimes I use green and red bell peppers, onion, mushrooms. And sometimes I use carrots, cauliflower, broccoli, mushrooms)



*Baked chicken breast with Italian seasoning, roasted sweet potato slices, with steamed green beans or asparagus (or another green) on the side

*Veggie burgers on whole grain flatbread with salsa and mashed avocado on top and kale chips on the side


*Veggies burgers cut up in a mixed dark green salad with cucumbers, tomatoes, celery, blueberries, apples, and strawberries (optional to add some feta cheese)

*Soups and chili - too many recipes to share them all, but we especially love turkey chili with homemade seasoning and chopped up bell peppers, onions, zucchini, and squash





*Turkey Meatloaf muffins (lots of hidden veggies in this one!) with roasted or sauteed veggies on the side

*Chicken fajitas with red and green bell peppers, onions, mushrooms on whole wheat tortillas or in a bowl of brown rice topped with black beans and greek yogurt (a GREAT alternative to sour cream)

*Shakeology- The healthiest meal of the whole day. Blended up with 1/2 banana, almond milk, and a scoop of pb2






*Oatmeal with almond butter and fresh blueberries (this is a personal FAVORITE!)

*Overnight yogurt and oat parfaits with berries

*Egg sandwiches on Ezekiel bread with turkey bacon, topped with mashed avocado and served with sauteed peppers and onions with garlic on the side

*Scrambled eggs with zucchini, onion, peppers, topped with salsa and plain greek yogurt (optional to put this in a whole wheat tortilla as a breakfast burrito
